Too hot to cook? Make these Easy Summertime Chicken Tacos for something quick to make and cooler to eat! Servings*: 2 soft corn tacos per person You’ll need: 8 thin corn tortillas, fresh or thawed 8 oz. grilled chicken breast strips “bite-size” 1 small bunch green onions, sliced 1/4 small red pepper, sliced thin and chopped into 1 inch pieces 1 cup shredded romaine lettuce 2 Tbsp. light soft cream cheese 2 Tbsp. light sour cream 1/2 tsp. taco seasoning 1/2 cup salsa for serving on the side For Mexican Spread: In a small bowl, using a small whisk, mix together thoroughly the Soft Cream Cheese, Sour Cream and taco seasoning. On a plate assemble the Chicken Soft Tacos: Using a silicone spatula carefully cover 1-1/2 tsp. of Mexican Spread on each corn tortilla. Put 2 corn tortillas together by layering with spread on one side and not on the other side. There should be Mexican Spread in between the corn tortilla layers and on top, but no spread on the bottom of the soft taco. Next, top with pre-cooked “bite-size” chicken breast meat, red pepper pieces and shredded lettuce. Then top with a sprinkle or two of chopped green onion. Roll and thread with a toothpick or two. I used a plastic cocktail sword. Repeat the above process for the other 3 Chicken Soft Tacos. Karen’s Serving Suggestion: Serve immediately with 6-7 baked blue corn tortilla chips and a 1/4 cup side of salsa on one plate to share or 2 separate serving plates. A couple of sliced lime wedges can be put on plates for a hint-of-lime. Also, a 1/4 cup serving of fresh sliced chilled strawberries, watermelon or applesauce can be served with these Easy Summertime Chicken Tacos, but not absolutely necessary. *Servings can be increased up to 6 for a 2 dozen package of fresh or thawed thin corn tortillas.

Servings: Serves 2 pita pockets per person You’ll need: 12 Thin slices of deli turkey or 4 cooked egg whites 4 Wheat pita pockets, already sliced in half 2 Tbsp. Miracle Whip light (optional) 4 strips peppered bacon, precooked and crumbled 1 Roma tomato, cored and thinly sliced lengthwise 1/4 small red onion, sliced into quarter ring pieces 1 cup spinach leaves, washed and stems removed 2 fat free American cheese slices, torn into pieces Preheat cooked egg white & peppered bacon on a covered plate in microwave for 30-40 seconds. On another plate assemble 2 pita pockets with (optional) 1-1/2 tsp. each of Miracle Whip and stuff each with either 3 Turkey slices or 1 cooked egg white, as well as one quarter each of the crumbled bacon, pieces of cheese, tomato strips, red onion slices and spinach leaves. Repeat the above process filling 2 more whole wheat pita pockets on the microwaved, but now cool-to-the-touch, plate. Serve immediately with 6-7 baked corn tortilla chips and a 1/4 cup side of salsa. A 1/4 cup serving of fresh fruit or applesauce can be served also, but not necessary. Karen’s Note: The pita pockets may start to tear when assembling the pita pocket sandwich…don’t call 911…just use round toothpicks to hold everything together on each end! Servings: 2 You’ll need: 1-1/2 cups precooked white or brown rice 2 Tbsp. light butter 2 tsp. canola oil 1/4 cup almond slices 1/2 small peeled, cored and chopped red delicious apple* 1/4 cup raisins 1/4 cup fat free milk* 2 tsp. cinnamon sugar* Melt 1 Tbsp. light butter in 1 tsp. canola oil in a medium pan. Add almond slices and toast on medium/low heat, while stirring, until a golden brown. Stir in apples and saute, while stirring on medium/low for about 5 mins. Stir in raisins, the remainder of canola oil and butter. Add fat free milk. Turn heat to low and cook, while continually stirring, until liquid is absorbed, but do not scorch or burn milk to the bottom of the pan. Serve immediately, while still hot and sprinkle the top of each with 1 tsp. cinnamon sugar. Karen’s Note: This side dish can be served for breakfast or snack too! It is great with fat free milk or ff half & half too! *Another variety is to use chopped onions instead of apples and vegetable broth instead of milk and stir in 1/2 tsp. cumin and sprinkle with 1/2 tsp. ground cinnamon without sugar for a vegetarian and sugar-free side dish. Serving suggestion: Garnish with the remaining half apple sliced with a wedge of Laughing Cow or Baby Bell light Swiss cheese and 5 whole wheat crackers to round out this meatless side dish. |
