Servings: 2 You’ll need: 1 cup frozen mango chunks 1-1/2 cups fresh sliced strawberries 3 Tbsp. sugar or Stevia sweetener 2 cups low fat no sugar added frozen vanilla yogurt or ice cream 1/2 cup low fat milk Large serving glasses & iced tea spoons Whole strawberries for garnish (optional) In a blender pulse frozen mango, strawberries and sweetener. Add low fat frozen vanilla yogurt or vanilla ice cream and low fat milk. Blend on high speed or pulse, until well blended. Strawberry Mango Smoothie/Frap will be very thick. Serve immediately by pouring gently easing with a spatula into two large bar or drinking glasses and enjoy! Karen’s Note: I definitely love strawberries and when they come in season and I enjoy picking and eating them right out of my strawberry patch too! Servings: 2 You’ll need: 1 heart Romaine lettuce, washed and chopped 2 Roma tomatoes, washed, stems removed and diced 1 ripe avocado, halved, pitted, peeled and diced 8 oz. white button mushrooms, cleaned and sliced 4 slices turkey bacon, precooked and torn into pieces 4 oz. low fat mild cheddar cheese, shredded 4 oz. raisins (optional) Fresh ground peppercorns (optional) Fat free sweet dressing (such as Catalina) Toss into a medium-large size salad bowl the chopped lettuce, diced tomatoes, diced avocado and sliced mushrooms. Serve immediately into two salad bowls topped with turkey bacon pieces, (optional) raisins and shredded cheese your favorite fat free sweet dressing. Karen’s Note: Have handy an (optional) peppercorn grinder for some nicely fresh ground pepper and maybe some lemon wedges to squeeze over salad too! Servings: 2 You’ll need: 1 slice whole wheat bread, toasted 4 oz. whole wheat wide egg noodles 1 cup frozen peas 2 Tbsp. olive oil 2 Tbsp. light butter 1 garlic clove minced 1/4 cup fat free sour cream 1 can (5 oz.) tuna in water, drained 1/2 tsp. seasoned salt 1/2 tsp. paprika 1/4 tsp. cayenne power 1/4 tsp. black pepper 1/4 tsp. salt 2 tsp. grated Romano cheese Pulse whole wheat toast slice in small food chopper until crumbed. Cook whole wheat egg noodles according to package directions, adding frozen peas during the last 2 minutes. Reserve 1/4 cup of cooking liquid and drain noodles and peas in a colander and set aside. Add olive oil to a large pan and melt light butter. Cook minced garlic on low heat sauteing and stir continually in oil and butter, until it begins to brown, about 1 minute. Turn off heat. Stir in reserved cooking liquid, sour cream, tuna, seasoned salt, paprika and cayenne powder. Season to taste with salt and black pepper. Serve immediately topped with 1/2 of the bread crumbs and 1 tsp. grated Romano Cheese. |
