On a cooler evening I decided to bake as I always do when the weather gets a bit chillier outside. These Simply Irresistible Brownies have been taste tested by my family and given rave reviews as I’m asked, “Are there any more?” Well of course! Servings: 8 bars You’ll need: 1/2 cup all-purpose flour 1/3 c. unsweetened cocoa powder 1/4 tsp. baking powder 1/8 tsp. salt 1 c. dark brown sugar 1/3 cup canola oil 1 lg. egg 1 lg. egg white 1 tsp. vanilla extract 1/3 cup mini chocolate chips 1 cup chopped walnuts (heaping) Buttery cooking spray Coat an 8″ x 8″ baking pan with buttery cooking spray. Heat oven to 350 degrees F. In a large bowl, using a wisk, combine flour, cocoa, baking powder and salt. In a small bowl, combine brown sugar, oil, eggs and vanilla extract. Whisk until smooth. Pour into flour mixture and stir until blended. Stir in chocolate chips and 3/4 of the chopped walnuts (batter will be slighty stiff). Spread batter evenly in prepared pan. Sprinkle the remainder of chopped walnuts over top of brownie batter. Put in oven and bake for 20 -22 minutes, until firm at edges and woden pick inserted off-center comes out clean. Place pan on rack and let cool completely. Cut into 8 bars, serve* and enjoy these simply irresistible brownies! *Serving Suggestion: Heat each brownie bar individually for 15 seconds on a serving plate and top with 1/2 cup scoops of reduced fat vanilla ice cream.
