Pistachio Pineapple Salad
1 – 20 oz. can crushed pineapple in 100% juice
1/2 pkg. (approx. 5-6 oz.) miniature marshmallows
2 boxes sugar free fat free instant pistachio pudding mix
1 small 8 oz. tub fat free Cool Whip thawed in refrigerator
In a medium bowl that holds at least 16 cups; using a spatula mix both packages of SF FF pistachio pudding mix with the entire can of crushed pineapple, including all of the pineapple juice.
Next stir in the Cool Whip, until thoroughly mixed. Stir in the miniature marshmallows. Take the spatula and scrape down the sides and level the top as flat as possible.
Chill in the refrigerator for at least 3 hours or overnight and serve.
