Serves: 16 You’ll need: 1 cup whole wheat flour 1/4 cup unbleached flour 1/2 cup sugar 1/2 cup Splenda 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. salt 1 tsp. baking powder 1 tsp. baking soda 1/4 cup unsweetened cocoa powder 1/4 cup chopped walnuts 1 whole egg, and 1 egg white (whipped) 1-1/2 cups zucchini (unpeeled and grated) 1/4 cup fat free sour cream 1 tsp. vanilla 1/2 cup unsweetened applesauce 1/4 cup mini chocolate chip morsels Butter flavored cooking spray Powdered sugar (optional) In a large bowl mix together first 11 (dry) ingredients, including nuts. In a medium bowl mix together egg, zucchini, sour cream, vanilla and applesauce. Add dry ingredients and mix in chocolate chips morsels. Pour batter into a 8″ x 4′ x 2″ prepared with cooking spray loaf pan. Bake at 350 degrees for about 55 minutes, until a toothpick or knife comes out clean. Cool completely, top with (optional powdered sugar), before slicing.
