Yes, this isn’t a recipe post, but a blog post by the very own Cooking Artist, Karen Verdusco. Quite recently, her elderly father has been diagnosed with diabetes. Even though he’s now at the ripe age of seventy-five he is an active man, who still works part-time helping other elderly people and who’s always surrounded by a large family full of love and support. Unfortunately, because of having a large family, there are always family gatherings that include lots of food. He asked Karen if she could find recipes to help those with diabetes and even mentioned “filling foods” or foods that were low in saturated fats and “bad” carbohydrates. Karen has also struggled with having unhealthy high blood pressure for most of her adult life. Now, she is dealing with peri-menopausal symptoms. Foods now seem to trigger both of her conditions. Unfortunately, certain spices, sugars and even high caffeine don’t help her symptoms in the least. Now weight gain and lack of exercise seem inevitable, especially with increase in age for both her and her spouse. Therefore, she has been researching foods and recipes to help combat diabetes, high blood pressure and menopausal symptoms. Foods that are high in bad fats, sodium and sugars are no longer to be added to this recipe blog. However, foods that are more “filling” and higher in fiber and nutrients will be featured even more, which is a good thing! Some things to look forward to in the future for Karen’s Recipes…possibly a recipe book and some cooking tips videos. Who knows? Maybe she can even get a chance to cook with some cooking greats, such as Emeril or Rachel Ray. Whatever the future may hold for Karen’s Recipes only good things can come from cooking and eating healthier!
