Makes 12 large servings You’ll need: 2 pkg. instant French vanilla pudding mix 3 cups fat-free milk 8 oz. fat-free cool whip, thawed 16 large, low fat, graham crackers Chocolate Topping: 3 Tbsp. light butter 2 Tbsp. canola oil 1-1/2 cup confectioner’s sugar 7 Tbsp. cocoa powder 3 Tbsp. fat-free milk 2 Tbsp. white corn syrup 1 Tbsp. vanilla extract Step 1: Mix pudding mix with milk, until slightly thickened. Fold in Cool Whip. In the bottom a 9 x 12 glass cake pan layer 1/2 of the graham cracker crumbs. Next, layer half of the French vanilla pudding. Repeat the graham cracker crumb layer and pudding mix layer. Cover cake with plastic wrap and refrigerate overnight. Step 2: Melt butter over medium heat in a large saucepan. Add canola oil, confectioner’s sugar, cocoa powder, milk, white corn syrup and vanilla extract, until chocolate syrup is thoroughly mixed. Remove from heat and set aside to slightly cool for about 10-15 minutes. Remove chilled pudding cake from the refrigerator, remove plastic wrap and pour chocolate syrup over top. Cover cake and put back into refrigerator for another 6 hours or overnight. Slice into 12 large squares and enjoy! Karen’s Note: This delicious cake recipe is from my husband Frank’s cousin Gerry. I’ve found that if you freeze it overnight for the 2nd step and then allow to slightly thaw for about 25-30 minutes, prior to serving that it is a bit more solidified to cut and serve. If the center of the cake is still frozen then microwave each piece individually for about 15 seconds, before serving.

Servings: 4-5 You’ll need: 1 – 1-1/2 lbs. lean ground turkey Non-stick cooking spray 1 small onion, diced 1 Tbsp. garlic, minced 2 Tbsp. ground cumin 1-1/2 Tbsp. chili powder 1-1/2 tsp. salt 1 tsp. ground black pepper 1/2 cup tap water 1/2 cup light Colby cheese, shredded 2 Tbsp. jalapenos, sliced 1/4 cup chunky salsa 1 Tbsp. fat-free sour cream 1 – 1-1/2 cups. guacamole 4-5 servings “restaurant style” tortilla chips Spray the inside of a medium pan with non-stick cooking spray. Add ground turkey and stir over medium-high heat,to begin browning. Add diced onion, minced garlic, cumin, chili powder, salt, black pepper and water. Continually stir, until meat is completely browned. Set heat to low. In a large serving platter with a slight ridge set up tortilla chips into a single layer. Drain meat completely and top chips with the cooked turkey taco meat. Next, sprinkle evenly with cheese and add the jalapeno slices. Put into the microwave oven with a vented cover and cook, on high heat, for about 1-1/2 – 2 minutes, until cheese is completely melted. Carefully remove hot serving platter from oven with a heat resistant oven mitt and top evenly with guacamole, salsa and a dollop of sour cream. Serve immediately and enjoy! Karen’s Note: This is a recipe that you can make during a sporting event or game, but you may want to have all the ingredients fully prepared ahead of time, so this will only take about 10-15 minutes to assemble and heat. The meat can be reheated by microwave, but remember to drain the meat, prior to adding to the nachos. That way your nachos don’t become “soggy”! Good Morning! Here is their wonderful holiday and party dip (otherwise known and Olive/Tomato Salsa) recipe that I actually made last weekend, so enjoy! -Karen You’ll need: 1 jar stuffed green olives, drained 1 can pitted black olives, drained 4 Roma tomatoes, tops removed 1 bunch green onions 2 Tbsp. extra virgin olive oil 2 Tbsp. red wine vinegar Place ingredients in food processor and pulse, until all ingredients are completely chopped. Chill and serve with cheese, whole wheat crackers or baked pita chips that you can make yourself, or even save time and money and purchase my recommended Stacy’s Pita Chips at your local supermarket. Karen’s Note: To “kick” this recipe up a “notch” just add about 2 Tbsp. of pickled jalapeno slices or 2 fresh jalapenos to the food processor for a spicier dip.
