Approx. 8-12 servings You’ll need: 1 cup all-purpose flour 1 cup whole wheat flour 1 cup fresh blueberries, or frozen thawed 3 tsp. baking powder 1/2 tsp. salt 3 Tbsp. sugar 2 large eggs 1 Tbsp. canola oil 1/4 cup unsweetened applesauce 1 1/2 cups fat free milk 1/2 tsp. vanilla extract To make the pancakes, in a large bowl combine flours, baking powder, salt and sugar. In a separate bowl, whisk together the egg, oil, milk, and vanilla. Add the eggs, oil, applesauce, milk and vanilla extract to the dry and mix to incorporate, blending well. Slowly hand stir in the blueberries. Let rest for 5 minutes. Pour 1/4 cup of batter onto a non-stick griddle (heated to 350°F) or a large non-stick frying pan and cook over medium heat. Cook until the edges of the pancakes are dry and small bubbles have formed on top, approximately 1 1/2 minutes; then flip with a spatula. Transfer to a 250°F oven to keep warm while repeating the procedure with the remaining batter. To make Blueberry Compote: You’ll need: 2 cups frozen blueberries 3 Tbsp. water 1/4 cup sugar 2 teaspoons lemon juice Combine 1 cup of the blueberries, water, sugar and lemon juice in a small saucepan. Cook, stirring frequently, over a medium heat for about 10 minutes. Add the rest of the blueberries and cook for 8 minutes more, stirring continuously. Serve warm. Karen’s Note: To serve, top each warm stack of pancakes with 1/8 to 1/4 cup warm blueberry compote.

(Apple-Banana-Cinnamon) Oatmeal Bars Servings: Makes 9 delicious bars! You’ll need: 2 bananas 2 eggs ¾ cup skim milk ½ cup sugar or Splenda for baking 1 Tbsp. vanilla ½ cup applesauce 1-1/2 tsp. baking powder 2 cups quick oats 2 tsp. cinnamon 1 tsp. cinnamon sugar* 1-1/2 oz. raisins and/or craisins (optional) Cooking spray Preheat oven to 350º F. Coat an 8 inch square baking dish with cooking spray. Combine the bananas, eggs, milk, sugar, vanilla and applesauce in a medium sized mixing bowl and mix on medium speed until completely blended. Now add the dry ingredients, except the (optional) raisins and/or craisins. Set mixer on low speed and mix completely, stopping to scrap down the sides. Drop in the (optional) raisins and/or craisins last and mix well. Pour mixture into the coated baking dish and bake for 45 minutes. *Before the last 5 minutes of baking time, sprinkle the cinnamon sugar on top and bake an additional 5 minutes. Cool at least 10-15 minutes before slicing into 9 bars. Karen’s Note: Usually, I double this recipe into 2 batches or 2 square glass pans, which will make 18 servings instead of the usual 9. Also, you can refrigerate the leftover or unsliced bars covered with plastic wrap. Our family really love to eat these delicious bars cold with our coffee for a Continental Breakfast! Servings: 2 You’ll need: 1-1/2 cups precooked white or brown rice 2 Tbsp. light butter 2 tsp. canola oil 1/4 cup almond slices 1/2 small peeled, cored and chopped red delicious apple* 1/4 cup raisins 1/4 cup fat free milk* 2 tsp. cinnamon sugar* Melt 1 Tbsp. light butter in 1 tsp. canola oil in a medium pan. Add almond slices and toast on medium/low heat, while stirring, until a golden brown. Stir in apples and saute, while stirring on medium/low for about 5 mins. Stir in raisins, the remainder of canola oil and butter. Add fat free milk. Turn heat to low and cook, while continually stirring, until liquid is absorbed, but do not scorch or burn milk to the bottom of the pan. Serve immediately, while still hot and sprinkle the top of each with 1 tsp. cinnamon sugar. Karen’s Note: This side dish can be served for breakfast or snack too! It is great with fat free milk or ff half & half too! *Another variety is to use chopped onions instead of apples and vegetable broth instead of milk and stir in 1/2 tsp. cumin and sprinkle with 1/2 tsp. ground cinnamon without sugar for a vegetarian and sugar-free side dish. Serving suggestion: Garnish with the remaining half apple sliced with a wedge of Laughing Cow or Baby Bell light Swiss cheese and 5 whole wheat crackers to round out this meatless side dish. |
