Servings: 3-4 You’ll need: 3-4 boneless, skinless chicken breasts, still frozen 1 12 oz. can beer, room temperature 7-8 peppercorns 3 whole cloves 2 bay leaves 16 oz. salted water, enough to cover the breasts Olive or canola oil Mix all the above ingredients to make the beer brine in a large bowl, enough to hold 32 ounces. Place the still frozen chicken breasts in bowl. Set covered bowl in the fridge overnight to brine. The chicken breasts will fully thaw and brine overnight. Sprinkle both sides of each thawed and beer brine chicken breasts with your favorite rub and set outdoor grill at 300 degrees. Scrape grill grate and wipe with olive or canola oil. Grill breasts, until largest breast is pierced in the middle with a knife and is no longer pink. These grilled chicken breasts will be so moist and delicious! Karen’s Note: Serve immediately with your favorite side dishes or chill in refrigerator for at least 3-4 hours. After chilled slice breasts into halves lengthwise and then dice or cut into strips. They are great to serve cold on top of your favorite salad, with cold pasta or wrapped up in a low fat tortilla. In the cooler fall and spring months I also make Chicken Tortilla, Noodle or Rice Soups that are great with this grilled chicken breast meat! Also, my beer brine to thaw frozen chicken breasts was an accidental quick attempt to get our always frozen chicken thawed and ready to place on the grill. We are always told to thaw chicken in refrigerator or microwave, but the fridge always takes too long and the microwave always starts to cook the meat too soon. Servings: 4 You’ll need: Cooking spray 1/4 cup yellow onions, diced 1/2 cup celery, diced 1 Tbsp. garlic, minced 2 Tbsp. sesame oil (for stir frying) 1 lb. thin sliced pork or boneless-skinless chicken thighs, trimmed of fat, cut in thin strips 2 Tbsp. low-sodium soy sauce 2 tsp. ground black pepper 2 Tbsp. jalapeno slices ½ cup raw unsalted peanuts 2 cups brown rice, cooked according to package directions and kept warm In a large frying pan add cooking spray and set heat to high. Saute onions and celery, while stirring, until almost translucent. Stir garlic in completely and add sesame oil. Set heat to med.-high. Add the pork (or chicken) strips, soy sauce and 2 tsp. black pepper and continue stirring, until meat is browned (about 10-15 minutes). Set heat to low, adding the peanuts and stir an additional 5 minutes. Serve over cooked brown rice and enjoy! Servings: 8 You’ll need: 1 cup Basmati rice 2 cups fresh cherries, washed, stems removed, pitted and halved 2 tsp. salt Warm water 2 Tbsp. canola oil 1-2 tsp. sugar, Truvia or Splenda (optional) Salt to desired taste In a colander rinse rice twice, then soak in a covered bowl with 1 tsp. salted of at least 2 cups of warm water for 1-4 hours. Drain the water from the rice in a colander. Pour water in a large non-stick pan, until half full and bring to a boil. Add rice and 1 tsp. of salt and continue boiling until rice slightly softens. Pour rice into colander and wash it with slightly warm water. Pour 1 Tbsp. of canola oil into the pan and add rice. Pour another Tbsp. canola oil over rice. Cover the pan and cook over low heat for about twenty minutes. Add the cherries (and optional 1-2 tsp. of sugar) and cook for ten more minutes. If cooking time is increased, a delicious crispy layer of rice will form at the bottom of the pan. Salt to desired taste and serve along with your favorite grilled meat. Karen’s Note: This is not only an international treat, but quite a tasty Cherry Rice side dish to serve alongside any grilled meat, especially with grilled chicken, salmon or turkey. Can also be stored in a sealed casserole dish and reheated, as this Cherry Rice side dish will have just as much nutty and sweet aromatic flavor (if not more so) in the next day or two. |
